Buffalo Cauliflower Tacos

Equipment
- An Airfrier
- Microwave safe bowl

Ingredients
- 1 large head of cauliflower stem/core removed, cut in florets
- 1 tablespoon (plus a small amount) of olive oil
- ½ cup of buffalo sauce of your choice
- 1 tablespoon of butter
- 1 teaspoon of honey
- ¼ cup of flour
- ¼ cup of corn starch
- a pinch of salt
- 2 avocadoes
- a bag of your fave tortillas for making tacos
- 1 cup of shredded cheddar
- a high quality bleu cheese dressing, or just the cheese, your preference
- a few stalks of celery
Instructions
- If your airfrier needs to preheat, set it to 350°F and do that now
- Cut your cauliflower into small bite sized pieces
- Put the butter into a small microwave safe bowl and microwave until just melted
- Mix the butter and a tablespoon of olive oil, the hot sauce (1/2 cup), and honey (1 teaspoon) and then whisk together
- Pour the cauliflower into a large bowl, then pour in the butter/hot sauce mix and mix until it's all covered
- Mix the cornstarch, flour, and salt. Slowly sprinkle this onto the cauliflower and shake the bowl until it is all covered
- Airfry the cauliflower (in batches if you need the space) at 350°F for 15 minutes, maybe a tad more depending on the airfrier and the size of the cauliflower
- Cut up your avocado and celery into cubes, break your bleu cheese (if using the cheese) into small chunks
- Heat up a tortilla on a pan, then put in some of the shredded cheddar
- Once the tortilla is warm, add the bleu cheese, celery, caluiflower, and avocado. Enjoy!
