Cathead Biscuits
A "Cathead Biscuit" is a southern expression for a biscuit roughly the size of a cat's head. Not many things are measured using head units, but when you see the final product, it does make sense. Perfect flakey buttery biscuits made sinmple!

Ingredients

| unsalted butter (freezer cold) | 1 stick |
| all-purpose flour | A little more than 3 cups |
| baking powder | 1 tablespoon |
| sugar | 1 teaspoon |
| salt | 1 teaspoon |
| baking soda | ½ teaspoon |
| buttermilk | 2 cups |
| maple syrup or honey | 2 tablespoons |
| hot sauce | 1 tablespoon |
| garlic powder | ½ tablespoon |
| onion powder | ½ tablespoon |
Instructions
- Preheat the oven to 420°
- Make sure the butter is freezer cold. Cut the butter up into tiny cubes, about half an inch.
- Put the butter in a bowl with 2 tablespoons of flour, then toss it to coat it, and put it in your freezer until you need it again.
- In your food processor, add in 3 cups of flour, salt (1 teaspoon), baking powder (1 tablespoon), sugar (1 teaspoon), and baking soda (½ teaspoon).
- Add in the butter mixture and pulse the food processor 15 times for about 2 seconds each time.
- Pour the mixture in a big bowl and add 1 ½ cups of buttermilk. Stir until everything is just barely wet, without mixing more.
- Flour a clean flat surface, dry it down, and flour it liberally.
- Flour your hands and pour/dump the dough onto the surface. Mix the dough with your hands for a few seconds, then press it flat.
- Fold the dough in half and rotate it 90 degrees. Repeat this 3 more times.
- Press the sides and corners of the dough so that it's roughly a square and equal thickness throughout. Pro-tip, the smaller the square, the taller the biscuit, but the more time it will need to bake.
- Using either the back of a knife or something thin and hard (not the knife blade unless your surface is something soft that won't hurt your knife), cut the dough into 9 pieces like a grid pattern.
- Pick up your biscuits and place them on an oven pan, just about an inch apart.
- Mix together ½ cup buttermilk, maple syrup or honey (2 tablespoons), hot sauce (1 tablespoon), onion powder (½ tablespoon), and garlic powder (½ tablespoon), wisk well.
- Using a food brush, paint on a little of this mixture to the top of the biscuits.
- Put the biscuits in the oven for 10 minutes
- After the 10 minutes, paint on a little more of your buttermilk mixture and put the biscuits back in the oven for another 10 minutes.
