Peach Cobbler
Equipment
- A Baking dish, ideally 9x13"
- A pan or sheet that is larger than your baking dish, this may boil over while in the oven
- A large bowl

| baking powder | 2 teaspoons |
| salt | 1 teaspoon |
| butter | 12 tablespoons, freezer cold |
| water | ½ cup |
| vanilla ice cream | a lot |
Instructions
- Preheat your oven to 425°F.
- Cut your peaches into slices. I really recommend keeping the skins on, they're packed with flavor and will lose all their texture during baking.
- Put your baking sheet on the bottom rack of your oven to catch drips.
- In a bowl, mix the peach slices with ¼ cup sugar, ¼ cup brown sugar, ½ tablespoon cinnamon, nutmeg (¼ teaspoon), and cornstarch (2 teaspoons).
- Pour the sugared up peach mixture into the baking dish and put in the oven for 10 minutes. Pull it out when it's done, but in the meantime, the steps below are to get started on the crust.
- Put a pot of water on the stove to boil it (you will only need half a cup, but boil extra because of evaporation)
- Cut the butter (12 tablespoons, freezer cold) into really small pieces, or if you feel so motivated, use a grater on it.
- Combine the all-purpose flour (2 cups), baking powder (2 teaspoons), salt (1 teaspoon), ½ cup sugar, and ½ cup brown sugar. Mix all of this together.
- Add in your butter, mix up again, then add the boiling water (½ cup)
- Take the peaches, which have probably finished their 10 minutes by now and have been cooling, and dollop the dough on top of them in small spoonfulls.
- Mix together ⅓ cup sugar and 2 teaspoons of cinnamon and sprinkle on top.
- Bake in the oven for half an hour. Past the 20 minute mark, check on it every now and then by poking it with a toothpick or something to see if it's the level of done you enjoy.
- Enjoy! (with vanilla ice cream!)
